Ingredients

6 C chicken broth

1/2 C uncooked rice

3 egg yolks

3 T lemon juice

parsley & black pepper

Preparation

Bring broth to a simmer and add uncooked rice. Cover and simmer just untio rice is done, about 15 minutes. Whisk 3 egg yolks with 3 tablespoons lemon juice. Whisk a ladle of hot soup into egg mixture, then add back to pot. Garnish with chopped parsley and a little coarsely ground black pepper. Serve with warm pitas and hummus. Consider adding a little cooked, chopped chicken for more protein.
