Ingredients
1 box whole wheat penne
1 small container heirloom or cherry tomatoes, halved
2 firm avocados, cubed and soaked in fresh lime juice
1/2 purple onion, chopped
1 cup fresh Parmesan, grated
10 fresh basil leaves, chopped
1/2 cup extra virgin olive oil
2 Tb roasted dried ground chili peppers
salt and pepper to taste
Preparation
Prepare pasta according to package directions, al dente. Add the rest of the ingredients and toss until well-combined. Chill for 2 hours.
