Ingredients

1 540 ml can black beans, drained and rinsed

1.5 cups corn off the cob

1 lrg or two small ripe avocados, peeled and chopped

1/2 red bell pepper, chopped

1/4 C chopped green onion

Dressing:

1/3 C fresh lime juice

3 T olive oil

1 clove garlic, minced

1 t ground cumin

1/4 t each salt and pepper

Preparation

  1. combine black beans, corn, avocados, pepper, green onion in a large bowl
  2. combine dressing ingredients and then power over salad mixture and toss to coat.
