Ingredients

1 carrot

3 scallions (or green onions)

2 T skinned fresh ginger

2 T Miso paste

2 T rice wine vinegar

1/4 cup light sesame oil

1 tsp ground cayenne pepper

2 Ts water

3 avocados, ripe but still firm

Preparation

  1. Rough chop the carrots, scallions, and ginger.
  2. Dump them into the blender or food processor.
  3. Add miso paste, water, vinegar, and oil.
  4. Pulse the blender or food processor, scraping down as often as needed, until the mixture is finely chopped.
  5. Spoon the resulting dressing onto cubed pieces of avocado.
  6. Gently toss the dressing until the avocado has an even coating.
  7. Sprinkle with ground cayenne before serving.
