Ingredients
1 carrot
3 scallions (or green onions)
2 T skinned fresh ginger
2 T Miso paste
2 T rice wine vinegar
1/4 cup light sesame oil
1 tsp ground cayenne pepper
2 Ts water
3 avocados, ripe but still firm
Preparation
- Rough chop the carrots, scallions, and ginger.
- Dump them into the blender or food processor.
- Add miso paste, water, vinegar, and oil.
- Pulse the blender or food processor, scraping down as often as needed, until the mixture is finely chopped.
- Spoon the resulting dressing onto cubed pieces of avocado.
- Gently toss the dressing until the avocado has an even coating.
- Sprinkle with ground cayenne before serving.
