Ingredients

1 large avocado, halved, pitted, and peeled 

1/3 cup sour cream 

3 tablespoons fresh lemon juice 

1/4 cup extra-virgin olive oil 

Kosher salt and freshly ground pepper 

Preparation

Combine avocado, sour cream, lemon juice, oil, and 2 tablespoons water in a food processor or blender; purée until smooth. Season with salt and pepper.

Refrigerate in an airtight container until ready to serve, or up to 3 days.
