Ingredients
2 T fresh lemon juice
1 T rice vinegar
1/2 t salt
1/2 t sugar
3 T finely chopped red onion
1 T finely chopped seeded jalapeno pepper
2 T dried Wakame, soaked in warm water for 20+ minutes
8 oz. cucumbers, peeled, seeded and cut into 1/2" cubes (2 C)
1 large ripe avocado, pitted, peeled and cut into 1/2" cubes
2-3 T shopped fresh cilantro
Preparation
- Dissolve salt and sugar into lemon juice and rice vinegar.
- Mix in onion and pepper. Let stand 15 minutes.
- Drain softened Wakame, rinse and drain again.
- In a separate bowl, combine Wakame, cucumbers, and avocado.
- Add onion mixture and cilantro and toss well.
- serve chilled.
