Ingredients

2 cucumbers

2 avocados (not too ripe)

2 apples (Fuji, Gala, Pink Lady, etc)

1/2 cup yogurt, chilled

1/4 cup dried cranberries

1/4 cup walnuts, coarsely chopped

6-8 mint leaves, chopped

Preparation

Slice cucumbers, avocados, and apples into bite-size pieces. Mix walnuts, mint, and craisins into yogurt. Toss vegetables with the dressing. Use low-fat yogurt for a low-calorie meal.
