Ingredients

2 packages (6 ounces each) lime gelatin

1-1/2 teaspoon salt

4 cups boiling water

3 cups cold water

1/4 cup lime juice

4 avocados, peeled, pitted and mashed

3/4 cup mayonnaise

Bibb lettuce leaves

Preparation

In large mixing bowl, dissolve gelatin and salt in boiling water. Add cold water and chill until thickened about l-1/2 hours. When gelatin is thickened, in a medium size mixing bowl, combine lime juice, avocados, and mayonnaise. Mix well. Add this mixture to gelatin mixture blending well. Pour into a 12 cup mold. Chill until firm at least 6 hours. Unmold on serving dish covered with lettuce leaves.
