Ingredients

2 avocados

2 cucumbers-peeled and seeded

1 cup sour cream or yogurt (non-fat is fine)

2-3 cups stock - chicken or vegetable

1 lemon, zest and juice

salt

pepper

cayenne

hot sauce

Preparation

Dice avocados and cucumber. Puree in food processor with sour cream, stock, juice and seasonings to taste.

Chill for 2-4 hours. Flavors will develop.

Garnish with lemon zest and more hot sauce. Serve ‘as is’, or use your imagination! I like pico de gallo and crispy tortilla strips. Try crabmeat. Croutons. Whatever you like. Super refreshing and versatile.
