Ingredients
2 avocados (not extremely ripe) chopped
3 scallions minced
3 roasted garlic cloves minced
i bunch cilantro chopped
1/2 jar any kind tomatillo salsa (frontera is best-the one with the olives..)
sea salt to taste
2 ears roasted corn cut off cob
juice of 1 lime
olive oil
flour tortillas
(corn can be substituted but i found the flour to be better at holding the mixture together)
Preparation
mix all ingrediants together. spoon onto olive-oil pan fried tortillas-flour or corn.
fold & enjoy!
