Ingredients

4 whole plain English Muffins

3 Tbsp. Mayonnaise

1 ripe avocado, scooped out and coarsely mashed

2 medium sized tomatoes, sliced

8 3-inch slices of cheddar cheese

Salt and pepper to taste

Preparation

Preheat the oven to 400 degrees. Separate the English muffin halves and place them face-up on a large baking sheet.

Spread about a teaspoon of mayonnaise on each muffin half. Next, spread 1/8 of the slightly mashed avocado on each muffin. Top the avocado with 1-2 tomato slices as needed to cover the avocado. Finally, lay the cheese slices atop the tomato.

Bake until the cheese melts and you can see the muffins start to look crisp and toasty.

Sprinkle each melt with a bit of salt and pepper.
