Ingredients
12 eggs separated
3 tablespoons flour
12 oz. sugar
12 oz. English ground walnuts
Icing
6 eggs
8 oz. Baker’s sweet chocolate
8 oz. sugar
8 oz. sweet butter (unsalted)
Preparation
- In a large bowl, mix the sugar and egg yolks (separate the whites in a separate bowl) until it turns a pale yellow color and becomes creamy.
- Add flour and ground nuts to batter.
- Beat the egg whites until stiff and fold into the batter.
- Bake in a moderate oven (350 degrees) in 2 cake pans for around 40 minutes. ICING
- Mix eggs and sugar.
- Stir over slow fire until smooth and thick (must be done very slowly).
- Add chocolate, which you have melted in the oven (no water), or you can add it bit by bit into the egg/sugar mixture.
- Mix butter and add the above mixture.
- If you like, add a teaspoon of coffee to the hot mixture, or add more ground nuts.
