Ingredients
Cumin ½ teaspoon
Sugar ½ teaspoon
White pepper ½ teaspoon
Allspice ¼ teaspoon
Dash red pepper flakes
4-6 pounds pork baby back ribs
Steak Seasoning salt (any kind of commercial or homemade seasoning salt should work)
Chinese 5 spice powder
Large clove garlic sliced
2 teaspoons red wine vinegar
1 tablespoon olive oil
Favorite barbeque sauce
Preparation
Combine 1st five ingredients to make spice rub base. Rub the base well into meat and liberally sprinkle with the steak salt and 5-spice powder. Allow them to sit for 10-15 minutes. Place seasoned ribs in plastic bag, with marinade, which can be sealed to be airtight. Shake bag and refrigerate overnight, turn and squish ingredients now and then. Next day remove ribs discard garlic and marinade. Place ribs in foil lined pan and put in preheated oven at 375 for 10 minutes. Remove pan, liberally baste both sides of ribs with bar-b-que sauce, and return ribs to pan and place back in oven at 375 with rounded side of ribs up. Cook 1 hour, basting top of ribs frequently with sauce. Remove, cool in refrigerator, cut into separate ribs and place in barbeque sauce so that cut edges are now covered with sauce. . Return to refrigerator until ready to barbecue. Baste yet again with sauce and barbecue slowly at least 10 minutes turning ribs often and basting with sauce until done. Remember, once sauce has touched uncooked or partially cooked meat it must be reheated to boiling point to be safely used again on cooked meat.
