Ingredients

1 full rack baby back ribs, trimmed

3 oz yellow or spicy brown mustard

2 oz cider apple juice

2 oz cider vinegar

Sweet Baby Rays BBQ Sauce

Preparation

  1. Cover ribs with mustard and refrigerate overnight.
  2. Rub both sides of ribs with a genwerous amount of dry rub
  3. Wait 30 minutes, make foil pouch for the ribs, place ribs in pouch but leave open.
  4. Smoke over indirect heat, about 225, for 2 hrs.
  5. Take off grill, add apple cider and cider vinegar to pouch, close and bake in oven for 2 more hours at 225 Take out of oven and pouch, put back on smoker for a final hour, to form a crust. Mop on sauce during the last 15-25 minutes
