Ingredients

1 1/2 cups baby bow tie pasta

1 tbsp vegetable oil

1\2 onion chopped

3/4 cup chopped walnuts

1/2 cup chopped sweet green pepper

2 tbsp olive oil

1 Tbsp lemon juice

1/4 tsp salt

pinch pepper

2 tbsp chopped coriander

1 cup finely copped cherry tomatoes

Preparation

Toast 1/2 cup pasta. (I prefer using the microwave for toasting)spread pasta on a microwave safe plate. Microwave on high checking and tossing in 1 minute intervals until golden. In saucepan of boiling salted water cook toasted and remaining pasta until al dente, 7 - 8 min. Drain and rinse. Set aside in large bowl.

In skillet heat vegetable oil over medium heat: cook onion, stirring often until softened about 2 min. Add walnuts cook 2 min stir in green pepper & cook 1 more min. Pour over pasta. Add chopped coriander. Toss to combine. In small bowl whisk together oilive oil, lemon juice, salt & pepper pour over pasta mixture. Toss to combine. Garnish with cherry tomatoes and coriander sprigs.
