1/3 C pear nectar
2 T seasoned rice vinegar
3 T olive oil
6-8 C baby greens, washed and spun dry
2 C arugula, washed, spun dry and shredded
1/2 C broken nuts
freshly ground pepper to taste
In a small bowl, whisk together the pear nectar, rice vinegar, olive oil and pepper to taste.
In a large serving bowl, place the baby greens and arugula. Just before serving, pour the dressing mixture over and toss. Sprinkle walnuts over top and serve.
