Ingredients

8 oz of baby octopus

2 cloves of garlic chopped

2 0z of chopped shallots

1 t red pepper flakes

1/2 t salt

3/4 C olive oil

2 seeded chopped roma tomatoes

3 oz marinated artichokes

2C mixed baby greens

2T Baslamic Vinaigrette

Preparation

Poach baby octopus in olive oil, garlic, shallots, red pepper flake and salt. Serve over mixed greens, tossed with tomatoes, artichokes and balsamic vinaigrette.
