Ingredients
30 baby potatoes, washed
125 ml mayonnaise
125 ml natural yoghurt
30 ml lemon juice
10 ml freshly chopped thyme
8 marinated sun-dried tomatoes, sliced
10 olives, pitted and quartered
500 ml leftover cooked turkey, shredded
Preparation
Boil potatoes until tender. Set aside to cool, then cut them into halves.
Combine mayonnaise, yoghurt, lemon juice and thyme and season with salt and freshly ground pepper to taste.
Combine potatoes, sun-dried tomatoes, olives and turkey pieces in a large bowl.
Pour dressing over the mixture and toss lightly.
Refrigerate until ready to serve.
