Ingredients

3 large eggs

1 lb sweet potatoes

2 tsp salt, divided

2 lb red potatoes, quartered

6 bacon slices, diced

1 large red onion, chopped

3/4 cup cider vinegar

1 Tbsp mustard seeds

1 tsp dried crushed red pepper

1/4 cup veg oil

1/4 tsp pepper

1 bunch green onions, chopped

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Preparation

Hard boil eggs, chop, and set aside. Boil sweet potatoes and 1/2 tsp salt for 10 minutes. Add red potatoes and cook until tender. Drain. Cook bacon, reserving about 1 Tbl of grease in pan. Saute red onion in bacon grease until tender. Reduce heat to low. Whisk in vinegar, mustard seeds, and red pepper. Cook 2 minutes, whisking occasionally. Whisk in oil, pepper, and remaining salt. Pour vinegar mixture over potatoes. Add eggs, bacon, green onions, and parsley. Stir gently to combine. Season with salt and pepper.
