Ingredients

8 ounces bacon, rendered crisp

1 cup roasted or steamed cauliflower, chopped

1/4 cup roasted red pepper, chopped

1/8 cup scallions, chopped

1/8 cup fresh parsley, chopped

1/4 cup asiago cheese, grated

5 eggs, beaten

Preparation

Preheat oven at 350 degrees. Using the same pan bacon rendered in (if oven safe) with a slight cooking of bacon dripping, mix all ingredients together & pour into skillet. Place in preheated oven for 8-10 minutes. As frittata begins to solidify, top with cheese & bake until cheese melts & begins to brown, 2-3 more minutes.

Remove from oven & let stand 2 minutes.
