Ingredients
1 T butter
2 medium onions, chopped
1/2 pound bacon
2 c flour
1 T baking powder
1/2 t kosher salt
1/2 t black pepper
1 egg
1/2 pound gruyere cheese, shredded (2 c)
1 c water
1 can white beans
Preparation
-preheat over to 350F -puree water and white beans -melt butter in skillet, brown onions until caramelized -cook bacon until crisp; let cool; chop -whisk together dry ingredients -in a separate bowl, whisk together wet ingredients -pour wet mixture into dry mixture -stir until combined -fold in cheese and bacon -pour batter into bread pan (9"x5") -bake about 45 minutes (golden brown, toothpick comes out clean) -cool
