Ingredients
8 diced potatoes
¼ cup olive oil
8 crispy bacon strips, crumbled
2 cups sliced mushrooms
2 minced garlic cloves
1 tbsp dried basil
1 tsp salt
1 tsp paprika
1 cup mixed grated cheese
Parsley
Preparation
Microwave potatoes for 10 minutes. Toss all ingredients together except cheese. Bake @ 400F for 45 minutes. After a half an hour toss potatoes and sprinkle with cheese and parsley and return to oven.
