sweet potatoes, peeled and diced

tablespoon real maple syrup

1

teaspoon Sriracha sauce

1

tablespoon olive oil

slices thick-cut bacon, chopped

Preparation

Heat oven to 400°F. Line cookie sheet with cooking parchment paper or foil.

In medium bowl, toss sweet potatoes, syrup, sauce and oil. Spread on cookie sheet in single layer.

Bake about 20 minutes, turning once, until sweet potatoes begin to brown. Sprinkle bacon on top.

Bake 8 to 10 minutes longer or until bacon is crispy and sweet potatoes are tender.
