Ingredients

2 slices bacon, minced

1 stick butter

1 stalk celery, chopped

1 bunch parsley, minced

4 C bread cubes, toasted

1 C onion, chopped

1 T dried sage

1 C dried cherries

2 C turkey stock

1 C pecans, toasted

1 tsp thyme, dried

4 cloves garlic, minced

kosher salt and pepper to taste

Preparation

Saute bacon: *In a large sauté pan, brown bacon. In the accumulated bacon fat melt the butter and sauté the onions, celery, and garlic. Cook until translucent (about 10 minutes).

Make stuffing: Season well and toss in a bowl with the bread cubes, cherries, pecans, and herbs. Toss well and moisten with stock. Season with salt and pepper. Should be very flavorful. Make 1 day ahead and cool in the fridge overnight.

*Bake: *The next day stuff into turkey and bake according to instructions or in a buttered 9x13 baking dish at 350°F. Cover with aluminum foil and bake until heated through, about 30 minutes. Uncover and bake until top is slightly crisp and golden, about 10 minutes longer. Serve immediately.
