Ingredients

4 Boneless Chicken Breasts

1/2 Cup Ricotta Cheese

1/2 Cup Mozzarella Cheese

4 oz Cream Cheese

Diced Fresh Jalapeno to taste

4 Tbsp Sun Dried Tomatoes

1 red onion, sliced thin

4-8 Pieces of Bacon

Heavy Cream for sauce from drippings

Preparation

Pound Chicken breasts until thin. Mix the cheeses together. Lay Chichen breasts flat. Spread 1/2 mixture on breast, top with 1 tbsp of sun dried tomatoes and 1/4 of the sliced red onion. Roll up like a jelly roll, making sure the ends are sealed well. Take 1-2 pieces of bacon, wrap around the chicken breast. Bake at 350 for 40 mins or until done. (Note: Depending on the size of the chicken breast, it may require 2 slices of bacon.)

Once cooked, take the drippings from the pan, add heavy cream to make a sauce, spread over chicken breasts and serve.
