Ingredients
16 oz beef tenderloin
1 8oz pkg Boursin cheese
1 fresh jalapeno, seeded and chopped (optional)
4 slices bacon
Preparation
Cut beef into 4 equal portions. Cut each butterfly style and lay open. Place 2 oz slice of boursin in center of each piece of beef. Sprinkle with jalapenos and close. Wrap one piece of bacon around each portion of beef and secure with toothpick.
Grill over medium coals 20 minutes for medium-well.
