Ingredients

12 large fresh sea scallops

12 strips bacon (par cooked)

1/2 pomegranate syrup (or reduced pomegranate juice)

sea salt and pepper to taste

Preparation

Heat a medium sized saute pan over medium high heat and add olive oil. Add pomegranate syrup (or juice reduction) until bubbling and slightly reduced. Add sea scallops and toss to coat. Sprinkle with salt and pepper. Cook each side about 2-3 minutes until they firm up slightly and turn more opaque in color.

Wrap one par cooked piece of bacon around each scallop and place on a baking sheet. Drizzle each bundle with 1/4 teaspoon additional pomegranate syrup (or juice reduction) and place in broiler for 5-6 minutes until bacon crisps up on top.
