Ingredients
2 pork tenderloins cut into 2 " thick filets.
Wrap 1/2 a bacon strip around filets and insert filets into a skewer.
Prepare Chimichurri sauce
Can be made ahead
2 c fresh parsley leaves
2 T chopped garlic
1/2 t pepper
1/2 t red pepper flakes
Salt
Mix in food processor.
Add
1/2 c olive oil
1/4 c white wine vinegar
2 T water
Preparation
Brush pork with chimichurri.( reserving some for later) Cook 16 min. total.
Serve with reserved chimichurri sauce.
