Ingredients

2 Large boneless chicken breast

8 strips of bacon

1 cup chopped spinach

1/2 cup grated parmesian cheese

salt

pepper

garlic powder

Preparation

slice chicken breast lengthwise (butterfly) in a seperate bowl combine finely chopped spinach, cheese, salt, pepper, and garlic powder. add 1/2 mixture to each breast and roll breast around mixture. take 2 sheets of aluminum foil and rub with olive or veg oil lay 4 strips of bacon on each oiled sheet and lightly season with salt and pepper roll chicken breast on bacon so bacon is wrapped around the breast seal TIGHTLY in the aluminum foil submerge in pot of boiling water for 20-25 mins take out and let sit for 5-10 mins refrigerate for 20-25 mins remove from refrigerator and carefully remove alum foil. pan fry on med heat until bacon is crispy. serve
