Ingredients
8 eggs
1/4 tsp salt
2 cups milk
1/2 tsp dried tarragon
6 oz cheddar cheese
6 oz asiago cheese
4 bagels (any variety)
Preparation
In a large mixing bowl, beat together the eggs, salt, milk and tarragon. In a separate bowl, shred both cheeses. Cut the bagels into small bite-sized pieces. Grease a 9x13 pan, add half the bagel pieces, sprinkle with half the cheese, then repeat layers. Pour the egg mixture overtop, cover and refridgerate overnight. Bake uncovered at 350 degrees for 1 hour, until top is golden brown. Serve warm.
