Ingredients

1/2 cup parsley

4 shallots

1 large butternut squash, peeled, seeded and sliced

2 TBS butter

1 tsp salt

1/2 tsp nutmeg

Preparation

Melt butter and saute shallot for 5 minutes. Stir in squash. Add salt and nutmeg and pepper and continue cooking for 3 minutes. Can be made ahead of time to this point. Transfer to baking dish and bake 45 minutes. add parsley and toss and serve.
