Ingredients

2 T butter

1/2 tsp cinnamon

1/4 tsp nutmeg

1 1/2 lb butternut squash, peeled, sees and cut into 1/2 inch cubes, about 5 cups

2 - 3 Granny Smith apples cut into 1/2 inch cubes, about 4 cups

1/4 cup real maple syrup

1 T balsamic vinegar

1/4 c toasted chopped pecans

Preparation

Heat oven to 375. Place butter in 13x9 or 3 qt glass baking dish. Heat until melted. Stir cinnamon and nutmeg into the butter, add squash to coat. Cover with foil and bake 20 minutes. In a large bowl, mix apples, syrup and vinegar. Pour apple mixture over the squash. Cover and bake 10 minutes. Stire and bake 5 to 10 minutes longer or until squash is tender. Stir before serving and sprinkle with pecans.
