Ingredients

1/2 lbs fresh mushrooms, sliced

6 tablespoons butter

8 chicken breast halves - boned and skinless

1/2 cup Parmesan cheese

2 eggs - beaten

1 cup Italian-seasoned bread crumbs

1/2 lbs Swiss or Montery Jack Cheese - sliced

1/2 cup sherry

Preparation

Saute mushrooms in 2T butter - set aside Coat chicken in Parmesan cheese, then dip in eggs, then dip in bread crumbs brown chicken in butter, then place in baking pan cover with sliced cheese and sauteed mushrooms Bake at 350 degrees for 15 minutes Add sherry and bake for an additional 15 minutes
