Ingredients
1 5 lb can whole green chiles
2 lbs lean ground beef
1 lb monterey jack cheese
4 eggs
1/4 C milk
2 Tbsp flour
Preparation
Drain chiles reserve liquid. Slice chiles lengthwise. so they can be “stuffed” Slice cheese into 1/4" strips Fry beef, and season as desired. Stuff chiles with beef and strips of cheese. In separate bowl.. combine eggs, milk and reserved chile juice,& flour. whisk until thickened.
Grease 9x 12 baking pan.. place stuffed chiles in pan.. pour egg mixture over the stuffed chiles .bake at 325 for 40 minutes
