Preparation
cut the eggplant into ~1/4 inch disks. Broil for 5 min on each side (until golden brown). Use pyrex to layer eggplant, sauce (spice up with garlic and crushed red) and cheese. Can do just mozz or combo mozz and parm. fresh basil if available. repeat. bake on about 400 for 20-30 minutes…top should get little cripy and sauce should be bubbling.
