Ingredients
2 Tsp softened butter
1 tomatoes, sliced
1 oz prosciutto
4 leaves fresh basil or other herb of choice (optional)
4 eggs
2 Tbsp parmesan
salt & pepper
4 Tbsp cream (optional)
Preparation
Preheat the oven to 375 degrees.
Butter 4 small rmaekins with softened butter. Place a tomato slice in the bottom of the ramekin, and top with a bit of prosciutto. If using herb(s), sprinkle top of prosciutto with them.
Break an egg over the top of the ramkein contents. Sprinkle with parmesan cheese and salt & pepper as desired (remember the proscuitto and cheese are quite salty already).
Place ramkeins on a baking sheet, and bake in the center of the oven for 10-15 minutes (12 minutes should be about right, but will depend on your oven).
Serve immediately.
