nonstick vegetable spray

2 1/2 lb. russet potatoes cut into 3x1/2 inch pieces

3 Tbs veg oil divided

Kosher salt and fresh ground pepper

4 cloves garlic minced

2 Tbsp chopped parsley

Parmesean cheese (optional)

Preparation

Preheat oven 450 Coat large jelly roll pan with nonstick spray Toss potatos with 2 1?2 Tbsp. oil in large bowl and season with salt and pepper. Place in single layer on pan. Roast turning occasionally about 30 mins. Increase heat to 500 Continue roasting about another 5 mins. Whisk remaining 1/2 Tbsp oil, garlic, and parsley in large bowl. Add hot fries, season with salt and pepper, toss to coat. Sprinkle with parmesean if desired.
