Ingredients
1 lb Gnocci
1 can artichoke hearts, drained and chopped
8 oz shreaded Mozzarella cheeze
2 tbsp Olive Oil
2 tbsp garlic (minced)
pepper/salt to taste
desired italian seasonings
8-12 oz can diced tomatoes
Preparation
Preheat oven to 375 degrees.
Make sauce: in a small saucepan heat olive oil and garlic until golden. Remove from heat, add desired italian seasonings, can of diced tomatoes and salt/pepper to taste. Bring to a simmer then set on low heat while cooking gnocci.
Gnocci: Follow packaged instructions. Be sure not to overcook!
Using a loaf pan or casserole dish, layer sauce, gnocci, artichokes & cheese. Repeat until ingredients are all used. Top with a layer of cheese.
Bake until cheese is melted and starting to brown (approximately 15-20 minutes).
