Ingredients
6-2" zuchini
1 pint of sour cream plus 1/4c.
2 Tablespoons of oregano
3/4cup Fresh shredded Parmesan cheese
1/4 tsp. salt
Preparation
Wash zuchini and slice length wise in half. Then slice the halves in 1/2" slices. Put in microwave and cook just til tender. Drain well. Preheat oven to 350 degrees. Spray a 13x9 baking dish. Mix sour cream, oregano, and salt. Place drained zuchini in dish and spread the sour cream mixture carefully over the zuchini. Sprinkle with cheese and bake for 25-30 minutes or until lightly brown. Enjoy!
