Baked Jerk Pork Loin Chops with Guava Sauce
JERK MARINADE INGREDIENTS:
6 medium size pork loin center chops thin (½")
½ cup water
½ cup crystallized ginger, chopped
2 tbsp. canola oil
6 garlic cloves
1 medium yellow onion
2 habanero pepper (deseed)
¼ cup dark soy sauce
2 tbsp. fresh lime juice
2 tbsp. fresh thyme, chopped or 2 tsp. dried thyme
2 tbsp. fresh parsley, chopped
1 tbsp. sea salt
1 tbsp. brown sugar
1 tsp. cinnamon
1 tbsp. ground allspice
½ tsp. nutmeg
½ tsp. ground cloves
½ tsp. black pepper
GUAVA SAUCE
12 oz. guava preserve
1 cup of water
1/4 cup jerk seasoning (from marinade made for pork)
½ tsp. iodized salt
1 tbsp. lime juice
OVEN ROASTED VEGETABLES
Ingredients
½ lb. unpeeled red skin potatoes, slice 1" thick
½ lb. sweet potatoes, slice 1" thick
1 large red bell pepper, cut bite size pieces
1 large green bell pepper, cut in bite size pieces
2 cups zucchinis, slice 1" thick
8 oz. Baby carrots cut in half lengthwise
2 tbsp. fresh parsley, chopped
2 tsp. dried oregano
2 tbsp. olive oil
2 tsp. garlic powder
1 tsp. black pepper
Buttered flavor cooking oil
Preparation
Directions:
- Pre-heat oven 350 degrees F.
- In a 1 to 2 quarts saucepan add ½ cup of water and crystallized ginger. Cook it medium heat for 10 minutes until it has softened.
- Sauté garlic cloves, yellow onion and habanero pepper with 2 tbsp. canola oil until translucent (2 to 3 minutes).
- In a food processor add: sauté garlic, onions and habanero pepper, ginger and liquid,and rest of ingredients listed for jerk marinade. Pulse until a soft paste has formed.
- Save ½ jerk marinade for basting and guava sauce.
- Coat pork chops with jerk seasoning, being sure to cover all sides. You can bake it immediately or leave them marinating for few hours or overnight in a ziplock inside refrigerator.
- Cover a 24" shallow baking sheet with aluminum foil and arrange pork chops.
- Bake for 30 minutes and baste every 15-20 minutes.
- Turn the pork chops and bake for another 30 minutes or until tender to fork. Continue basting. Remove from oven and cover with aluminum foil.
- Start preparing Guava Sauce.
- Guava Sauce: a. In a saucepan add 1 cup of water and bring to a boil. Add guava preserve. Stir until it melts. b. Add salt, lime juice and half of the save jerk seasoning. c. Simmer low heat for 10-15 minutes until it thickens.
- Serve pork chops with guava sauce and garnish with finely chopped parsley.
- Serve with oven roasted vegetables.
Oven Roasted Vegetables Directions:
- Pre-heat oven at 400 degrees F
- Wash & dry vegetables.
- Cut red potatoes, sweet potatoes and vegetables.
- Arrange potatoes and vegetables in a roasting pan single layer.
- Drizzle olive oil, salt, garlic powder, black pepper, oregano & parsley.
- Roast for 30-45 minutes until tender, basting occasionally with the pan liquid.
- Sprinkle some water if the liquid evaporates.
- Remove from oven and spray with buttered flavor cooking spray.
- Sprinkle more oregano and parsley before serving.
