Ingredients

4 (6-oz) mackerel fillets

1 tbsp extra-virgin olive oil

1/2 tsp dried oregano

Pinch red pepper flakes

1/3 cup black olives, pitted and sliced

1 large garlic cloved, thinly sliced

1 (14.5 oz) can stewed tomatoes, drained and roughly chopped

Salt and freshly ground black pepper

Preparation

Heat oven to 375 degrees F

Rub mackerel with oil and season with salt and pepper. Place in an ovenproof baking dish and season with oregano and red pepper flakes. Top with olives and garlic, then cover with tomatoes. Sprinkle with salt and pepper and bake until fish flakes with a fork, about 20 minutes.
